Kakiage Soba Recipe

 

Ingredients:

20g sweet potato

10g carrot

20g green beans

20g onion

3 tbsp tempura flour

2 tbsp cold water

60ml soba soup base

80g dried soba noodles

2L water to boil soba

240ml water

Shichimi – seven flavor chili pepper

frying oil

 

Preparation:

  1. Slice sweet potato into quarter inch slices. Chop it into quarter inch strip.
  2. Slice carrots into quarter inch slices. Chop it into quarter inch strip.
  3. Chop off the stem end of green beans. Cut it into 2 inch pieces.
  4. Slice the onion into quarter inch slices.
  5. Sieve tempura flour into a bowl.
  6. Add cold water and stir lightly. (tempura batter)
  7. Put all vegetables strip into a bowl. Add a little tempura flour and mix it evenly. Add into tempura batter and mix it well.
  8. Prepare soup: Warm up soba soup base diluted with water in a pot.
  9. In the mean time, prepare fried vegetables mixture (kakiage): Place the vegetable mixtures on a wooden rice paddle. Gently put the mixture into the oil. Keep the vegetable strips together. Deep fry until both side turn golden brown.
  10. Drain the oil and place the kagiage on a rack.
  11. Take out a bowl of hot water from the pot. Place soba noodle in the boiling water. Gently spread the noodle evenly. When it comes to a full boil, immediately reduce heat to low. Let it for a few seconds and drain the noodle in running water.
  12. Reheat soba soup base.
  13. Emerge the noodle in icy water to give better texture. Drain the noodles well with a kitchen tower. Pour hot water onto the soba. Drain it with a kitchen towel again.
  14. Transfer noodle into a bowl. Pour the hot soba soup base to the noodles. Place kakiage on top of the noodles and finally sprinkle with some shichimi.

What You Will Need:

Plastic wrap

Bamboo mat

1/2 cucumber

Vegetable peeler

Sharp knife

Cutting board

Avocado

4 crab sticks

2 c. sushi rice

2 nori sheets, cut in half (seaweed sheets)

1 tbsp sesame seeds

Small spoon

Damp kitchen towel

Bowl of clean water

Kinsahi Japanese Restaurant (金旭) @ Jusco Tebrau, Johor Bahru

Japanese food again for Sunday lunch. As there are only two Japanese restaurants available in Jusco Tebrau; Sushi King and Kinsahi, without hesitation i opted for Kinsahi.

The interior of the restaurant was fashioned in a rather somber mood, with wooden wall.

Once we were seated, a bowl of seasoned scallops was served to us. At first, we thought it was FOC just like http://pinkielollipop.blogspot.com/2009/06/blog-post.html where they serve tasty FOC starter for everyone. However, this was not complimentary and they charged us RM5 for that, which was outrageous. I should say this was sorta like a rip off.

Mr. Bf ordered this seafood ramen. There was nothing to shout about.

Rice topped with unagi, ebiko, small slices of salmon and tuna, egg, cucumber and some octopus. It was delicious.

To be frank, if there are more Japanese restaurants to choose, I would rather go to Ichiban Boshi, Sushi Zanmai or Sakae Sushi which is more worth the money spent.

Total bill comes with RM52+. With the membership card, I got 10% off the bill.

Hikage (影寿司) Japanese Restaurant @ Johor Bahru

It was Saturday and we decided to have our dinner at Hikage Japanese Ala Carte Buffet. When we reached the place, surprisingly there’s already quite a lot of people in the restaurant.

The restaurant is small. Tables are placed with little space between each other and to bump into the guest’s chair of the opposite table is likely to happen.

Anyway, Let's check out what they serve in the buffet.

You don't have to walk around to search for food as the staffs will serve the food right to your table after they take up your orders from the menu.

Soft shell crab tempura and ebi furai age (fried prawn). It was served lukewarm instead of pipping hot. We suspected that they made it in advance. It is soggy and greasy, a sign of old oil. The batter was not diaphanous but thick.

Drink and fruit bar. They only serve plain tasteless green tea, orange and mango juice (note that it’s not fresh juice). Two choices of fruit available; watermelon and honey dew.

06062009054_filteredTime for dessert and they only serve Magnolia ice cream though; cookies and cream, yam, strawberry, chocolate and etc. Not even macha ice cream for a japanese restaurant?!! Funny huh?!

I don’t like the restaurant’s layout and lighting. To be fair it was not a very satisfying meal for the money paid. The variety of food was too limited compare to other japanese buffet restaurants with almost the same price. No unagi kabayaki, no fresh juicy oysters and choice of dessert and drinks are almost non-existence. The quality of food is not good enough. I felt that the buffet is overpriced (RM48 each) for the quality they offered. However, the service is OK, the waitresses are quite attentive.
